Merand's Grigne Pains(r) range scores top bread marks


Merand of France, a manufacturer of bakery equipment, will launch a new generation of automatic bread-scoring machines - the Grigne Pains(r) range - at the IBA Exhibition in Munich from 3 to 9 October 2006.


[ClickPress, Fri Jul 21 2006] Merand of France, a manufacturer of bakery equipment, will launch a new generation of automatic bread-scoring machines - the Grigne Pains(r) range - at the IBA Exhibition in Munich from 3 to 9 October 2006.

The Grigne Pains(r) machines reproduce a traditional working method, which consists in slashing the dough with a blade between the fermentation and baking phases. Different sizes of baking trays may be used. The length, depth and angle of the cut (straight or oblique) are all adjustable. The scoring speed and regularity are impressive - for example, it takes less than two minutes to score 200 baguettes with seven cuts each.

Several types of installation are possible. The scoring machine may be included in an automatic production line between the fermentation tunnel and the baking tunnel. Alternatively, it can be set up on a conveyor, or used in conjunction with the MécaRack(r) baking rack loader-unloader, which avoids manual handling and enables continuous, concurrent scoring. The standard scoring machine may also be used by an operator.

In view of the difficulties of finding qualified and competent staff able to score bread correctly, especially over a long working period, Merand's Grigne Pains(r) scoring machine offers companies a good return on investment.
