Restaurant Eugene plans opening of Holeman and Finch Public House

Located in the Aramore, directly across from Restaurant Eugene, Holeman and Finch Public House will provide an exciting and vibrant social gathering place, where a person’s most basic food and drink needs are served with unrivaled quality and care.

The Public House is a much anticipated and welcome addition to the sophisticated mix of condos and retail at The Aramore.”
Named for the maternal Grandfathers of Chef Linton Hopkins (Eugene Holeman) and Greg Best (Frederick Finch), the menu will reflect Chef Hopkins passion for artisinal whole animal preparations and will feature house made charcuterie that will be displayed in temperature-controlled, floor-to-ceiling cabinets.
The cozy space will seat just sixty. The wine list will feature small production, boutique wineries and emphasize quality and value. Menu offerings will include farm egg and pancetta carbonara, house-made fettuccini, fried bologna and mustard, cane sugar coca cola floats, vanilla ice cream and sorghum syrup and tart of anchovies and olive among other items.
“The Public House will be small and intimate with a casual, relaxed atmosphere. Small plates of wholesome food will be the mainstay,” says Chef Linton Hopkins.
Mixologists, Greg Best, Regan Smith and Andy Minchow are determined to have the best offering of unique, quality spirits available. They are working hard to bring prized distillates, not yet in the market, to Georgia. All juices will be squeezed to order and, like Restaurant Eugene, the tonic and soda will be made in house daily.
