Burgers is the new trend in full-service restaurants in Greece, with both chains and independents specialising in or expanding their menus to include burgers in 2014. North American full-service restaurants expanded by 18% in terms of number of outlets, generating a current value increase of 6%, which demonstrates this trend, whilst other full-service operations also included burgers in their menus. The rise of the burger trend in full-service restaurants came as a result of the growing demand for more "quality" and "premium" options in burger fast food, as well as the need of operators to create a new trend to attract footfall. The casual dining trend is also prominent in this category.

Competitive Landscape

Carlson Cos, the operator of TGI Friday’s restaurants in Greece, retained its leading position in chained full-service restaurants with a value share of 28%, and held a 1% share in overall full-service restaurants in 2014. Carlson Cos operates in North American full-service restaurants, in which the competition was gradually limited to a very few chained players through the five year review period. What is more, the chain also benefited from the rising demand for burgers in full-service restaurants, given that burgers account for a good proportion of its menu offerings. The company maintains consumer attention and traffic by introducing new menu items, by offering menu deals and thanks to a well-located network of outlets in Athens and Thessaloniki. On the whole, full-service restaurants is dominated by independent operators in Greece, with most being family-run businesses in neighbourhood locations.

Industry Prospects

Demand for burgers is expected to continue to generate sales for the operators that carry such offerings on their menus, given that the burger trend is expected to increase in the years to come. On the whole, this trend is not enough to generate any significant movement in total demand, however, given that it is has little power in terms of overall sales. With the dominant cuisine being modern and traditional Greek cuisine, and the according restaurant type being European full-service restaurants, which is an overly populated foodservice type, the sales per outlet are set to continue to fall, as consumers reduce their demand faster than operations are put out of business.
