French members of SYNEG, a French professional body for kitchen equipment manufacturers, will be attending the EQUIP'HOTEL international trade fair (to be held from 5 to 9 November 2006 in Paris) to demonstrate a little known cooking concept – induction. This technique is non-polluting and offers a very high yield, improved quality of work, ease of implementation and unequalled resource savings.
[ClickPress, Thu Feb 23 2006] Induction cooking plates allow a container to be heated without either a flame or a hot surface, using a magnetic field. They constitute the only source of heat, releasing an impressive 90% to 95% of the energy used, with very rapid power increase, optimised temperatures and adjustment to within half a degree.
The technology offers numerous advantages – safety, speed, precision, flexibility, economy, working comfort and ergonomic design with easy and rapid cleaning. Chefs, caterers and confectioners, as well as hotel and restaurant managers, have all seen its benefits – induction cooking improves working conditions and allows cooking to be precisely controlled. It also reflects a growing desire from both consumers and industry professionals: to see food prepared directly in front of the customer.
This novel concept is both profitable and revolutionary. It is profitable because, even though it represents a relatively costly initial investment, it then generates many savings – in direct energy consumption, and in terms of maintenance, ventilation of kitchens and pan enamelling. It is revolutionary because induction consumes less energy and is more environmentally friendly.
