WACS Rallies Support For New Global Initiative, “How To Feed The Planet In The Future”

World Association of Chefs Societies (WACS) and the city of Daejeon unveiled today a new global initiative, "How To Feed The Planet In The Future", at a Roundtable Discussion before the WACS General Congress.

Panel members included distinguished members of the culinary community including Rick Moonen (Executive Chef/Owner, RM Seafood); Elisabeth Vallet (Director of Eurpoean Programs, Seafood Choices Alliance); Mats-Eric Nilsson (Author, food writer and investigative journalist); Sanjeev Kapoor (Chairman, Indian Cookery Pvt Ltd); Yen Koh (Executive Chef, Unilever Food Solutions, South East Asia and Singapor); and WACS President Gissur Gudmundsson.

The Panel issued a Declaration to all members of the culinary community to use their abilities to shape the future and create positive change. The Declaration outlines basic principles and specific action plans for developing and disseminating food for the future to enhance the health of humankind and improve the quality of life.

"As chefs and members of the culinary community, we are stewards of the world’s ecosystem," stated Chef Gudmundsson. "Every one of us has a responsibility to implement practices that promote health, nutrition, and sustainability. If we serve the Earth, it will serve us."

The Declaration outlines specific actions for the culinary community including supporting locally grown and in-season ingredients, knowing the exact origin of ingredients and how they were harvested, minimizing waste, and educating staff and guests about the importance of serving food with integrity.

Chefs and members of the culinary community from over 90 countries were in attendance and pledged to support the goals set forth in the Declaration. WACS will continue to promote this initiative to its 10 million members with a global campaign, seminars and events.
