Self-service cafeterias was adversely affected by the ongoing Italian economic crisis, as many employees chose to bring their own lunches instead of buying them at work. This was facilitated by employees using vouchers often provided by companies. During the crisis, an increasing number of Italian consumers opted to use their vouchers in supermarkets instead of self-service cafeterias. In addition, as chained self-service cafeterias tended to be located on motorways, these outlets suffered when Italians cut back on car travel. Furthermore, self-service cafeterias featured a limited, or even no service component and this was not particularly popular among Italian consumers, who are demanding and are used to the service in bars or cafés.

Competitive Landscape

In 2014, the leading brand in self-service cafeterias was Autogrill’s Ciao. It accounted for 30% of value sales of self-service cafeterias, slightly lower than in 2013, and for 36% of value sales of chained self-service cafeterias, equal to that of the previous year. Ciao is well-established in the country with 170 outlets in 2014. Yet Autogrill did not wholly escape the decline in sales during the crisis, caused by lower motorway traffic.

Industry Prospects

While a small decline in the number of outlets is expected, self-service cafeterias is anticipated to improve slightly in value terms over the forecast period. Compared to the review period, sales are expected to remain substantially flat or register a modestly positive value CAGR at constant 2014 prices, and there is set to be a marginally negative CAGR in terms of outlet numbers. This performance will be due to the popularity of more premium food offerings, including locally-sourced products. This is a trend which began within the review period, and will very likely become stronger over the forecast period. Self-service cafeteria operators will face increasing competition from operators of other foodservice concepts, such as 100% home delivery/takeaway.
