With an increasing number of Australians eating out and doing so more frequently, in 2014 a number of retail operators such as shopping centres and retail strips changed their strategies to increase food and beverages serving areas and capitalise on this trend. In fact, a report by Urbis, a consulting firm that analyses the performance of shopping centres in Australia, found that sales of food and beverages in Australian shopping centres doubled between 2004 and 2014. Furthermore, industry sources reported that previously food did not represent an important component of revenue for shopping centres, but in 2014 approximately one in three customers at a shopping centre in Australia ate whilst shopping. Considering 42% of street stalls/kiosks outlets were found within retail locations, this trend had a positive impact on value sales of street stalls/kiosks in 2014.
