[ClickPress, Mon Mar 15 2021] Whether you're donning a shamrock, sipping on a Guinness or simply dressing head to toe in green, don't let this St Patrick's day pass without spicing up your veggies with a little Yondu (www.yondu.co.uk).
If Green Beans with Gremolata or a Swiss Chard and Mushroom Wellington is on the cards, Yondu is your lucky charm this St Patrick's Day. Its Non-GMO organic soybeans are triple-fermented over the course of 100 days, then blended with the savoury broth of onions, white radishes, leeks, cabbage, carrots, shiitake mushrooms, ginger and garlic to create Yondu's unique avour that enhances the taste of a variety of cuisines.
If tradition is more your style, you can't let the day pass without whipping up some colcannon.
Making the humble potato sing is Yondu's job so don your apron and stepdance your way to the kitchen and give this recipe a go.
All Green Colcannon
Total time: 30 min and Serves 2
Yondu effect: Reduces need of butter and cream adding deep flavor. Reduces bitterness of Kale
Recipe benefits: Vegan version of the Irish traditional.
2 Maris Piper (or similar) potatoes, diced (450g)
1/2 bunch kale, de-stemmed and chopped
5 spring onions, chopped
1 Tbsp. olive oil
230ml coconut milk (unsweetened)
1 Tbsp. Yondu
1. Boil potatoes for around 15 minutes or until fork-tender; drain and reserve.
2. Using the same pot over medium heat, add olive oil and kale and sauté for 3 minutes. Add spring onions; cook 1 minute more.
3. Mix in coconut milk and Yondu and bring to a boil.
4. Add reserved potatoes and cook for 1 minute. Turn the heat off and mash with a potato-masher/fork. Garnish with lots of freshly cracked pepper and olive oil.
Yondu's umami will naturally reduce the bitter flavor of kale and will create a very traditional Colcannon taste with only vegetable ingredients.
Yondu is available to purchase via Amazon, retailing at £6.88 for 275ml. Visit www.yondu.co.uk/recipes/ for cooking inspiration.
